So this wasn’t supper tonight but my husband and I made this nam tok beef recently.
Totally unrelated, but this was the last meal I ate before going to the ER and having an emergency appendectomy to remove my perforated, necrotic appendix.
10/10 would eat again.
Since surgery I have been taking it easy and eating mostly bland foods... nothing worthy of posting here.

I looked up lol lak beef and they are similar! The Nam Tok has toasted rice powder which adds a wonderful nutty, textural element to the dish, but no oyster sauce. There’s something about the combo of fish sauce, palm sugar, lime juice and shallots that gives me goosebumps.
Coincidentally I picked up some oyster sauce the other day for another recipe. I’m going to make lok lak beef first though! It looks delicious!

The ER doc who read my CT came back in and was like WTF why did you wait so long. The surgeon also had a look of WTF when he was describing how long it took to washout the gross stuff. What can I say, it didn’t present with the typical acute appendicitis signs. Nurse fail, I guess.

It’s super tasty stuff. I’ve made it a few times. You can’t forget the lime and crushed pepper sauce on the side, though.
